tortillas
MAKES 12
INGREDIENTS
3 cups plain flour
1 tsp baking powder
1 tsp salt
⅓ cup olive oil
1 cup warm water
COOKING METHOD
STEP 1
Place the flour, baking powder, and salt into a medium bowl and whisk to combine.
STEP 2
Make a well in the centre, add the oil and water, and mix with a wooden spoon to form a shaggy dough.
STEP 3
Transfer to a floured bench and knead for two minutes or until smooth. Divide into 12 equal balls, cover with a tea towel, and allow to rest for 30 minutes.
STEP 4
Heat a frypan over medium heat. Roll out each ball into a 15cm disc and cook for 45 seconds on each side or until light brown spots begin to appear.
STEP 5
Wrap cooked tortillas in a tea towel to keep warm.
Tortillas can be made in advance, stored in the refrigerator and reheated in the microwave.
