With Greek It Is! Loin Roast
Simple and delicious way to flavour up those boring roast potatoes!
1 Greek It Is! Loin Roast
1kg waxy potatoes
1 lemon, rind & juice
1/4 cup olive oil
6 garlic cloves
1 tbsp dried oregano
2 rosemary sprigs, leaves stripped
sea salt & cracked black pepper
Cook Greek It Is! Loin Roast per instructions on package.
Preheat oven to 180C. Cut potatoes into large wedges, leaving skin on. Place potatoes in a medium roasting tray. Remove rind from lemon in strips, add to tray with garlic, dried oregano
and rosemary. Pour over lemon juice and olive oil. Season with salt and pepper. Roast for 40 minutes or until cook through and crispy.
