GRILLED PINEAPPLE SLAW

SERVES 4

INGREDIENTS

1 small pineapple, skin removed and cut into 1cm thick rounds

olive oil spray

1 cup shredded red cabbage

1 cup shredded white cabbage

1 carrot, cut into matchsticks

sea salt & cracked black pepper

 

For dressing

1 tsp yellow mustard

1 garlic clove, finely chopped

2 tbsp apple cider vinegar

¼ cup olive oil

COOKING METHOD

STEP 1

Heat a grill plate over med/ high heat. 

STEP 2

Spray the pineapple slices with olive oil and grill on both sides until caramelised. 

STEP 3

Set aside to cool before cutting into bite-sized pieces. Whisk together the dressing ingredients in a small bowl. 

STEP 4

Place shredded cabbage, carrot, and pineapple into a medium bowl, season with salt & pepper, pour over dressing and mix to combine. 

STEP 5

Ideally, dress the coleslaw half an hour before serving to allow the flavours to develop.
