Stir-fried greens with rice
with Peking Pork Chops
These simple stir-fried greens are everything your pork dish needs.
Serves 4
Ingredients
2 bok choy
1 bunch spinach
2 cups leftover cooked rice or store bought cooked rice
1 tbsp grated ginger
1 tsp finely chopped garlic
1 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp oyster sauce
fried shallot and extra grated ginger to garnish
Method
Roughly chop bok choy and spinach. Heat wok to med/high heat and add oil. Add ginger and garlic, fry for 1 minute then add bok choy and spinach and stir fry until wilted. Add cooked rice and toss with the vegetables. Add soy and oyster sauce and toss through. Serve garnished with fried shallot and grated ginger.
