insanely crispy Sweet Potato Wedges

With our 100% Australia South Carolina Pork Ribs.

Serves 4


1 packet KR Castlemaine Fresh Pork South Carolina Pork Ribs

3 medium sweet potato, washed

2 Tbs corn flour

Olive oil spray

2 tsp sweet paprika

1/2 tsp chili powder (optional)

Sea salt


Cook using cooking instructions on the back of product packaging.


Step 1

Cut sweet potato into wedges and place in a bowl, cover with cold water and allow to soak for 1 hour.  

Step 2

Preheat oven to 220C. Drain wedges, pat dry with paper towel and place in a large ziplock bag with the corn flour.  

Step 3

Shake well to coat the wedges then remove from bag and place the wedges on 2 oven trays lined with baking paper in a single layer. Spray both sides with olive oil and sprinkle with paprika and chili (if using).  

Step 4

Bake for 15 minutes, remove from oven and turn the wedges over. Return to oven and bake for another 10 minutes, or until cooked through and crispy. Serve sprinkled with sea salt.
