White Bean Tabbouleh

White Bean Tabbouleh

with Greek Loin

Delicious, traditional and simple Tabbouleh recipe.

Serves 4


1 tin cannellini beans
2 medium tomato
1/2 bunch spring onion
1/2 bunch continental parsley
1/2 bunch mint
juice of 1 lemon
4 tbsp olive oil
sea salt & cracked black pepper


Rinse beans thoroughly under running water, drain well and place in a medium bowl. Quarter tomatoes, remove seeds, dice and add to the bowl. Slice spring onion and roughly chop parsley and mint, add to bowl. Add lemon juice, olive oil and season with salt and pepper to taste. Toss to combine and serve.
